Instructions

1. 1. Preheat your oven to 375°F.

2. 2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning, then cook them for 5-7 minutes per side until cooked through. Remove the chicken from the skillet, let it rest, and then dice or shred it.

3. 3. In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant, then add the fresh spinach. Cook the spinach until it’s wilted, which should take 2-3 minutes.
