  • 46 pieces bone-in, skin-on chicken thighs
  • 1/4 cup lime juice
  • 4 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon olive oil
  • 1 cup jasmine rice
  • 2 cup chicken broth
  • 1 cup fresh cilantro
  • 2 cloves garlic
  • 1 jalapeño or aji amarillo
  • 1/4 cup mayonnaise or Greek yogurt
  • 2 tablespoon olive oil

Instructions

1. 1. Combine lime juice, garlic, cumin, paprika, salt, pepper, and olive oil in a bowl. Rub marinade over chicken thighs and marinate for at least 30 minutes.

2. 2. In a pot, combine rice and chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes until tender.

3. 3. Heat skillet over medium-high heat. Add marinated chicken thighs and cook until internal temperature reaches 165°F, about 6-8 minutes per side.

4. 4. In a blender, combine cilantro, garlic, jalapeño, lime juice, mayonnaise or Greek yogurt, olive oil, salt, and pepper. Blend until smooth.
