Instructions

1. Make the Cherry Puree: In a pot, combine 2 cup of cherries, ¼ cup of water, 6 tablespoon of sugar, and 2 tablespoon of lemon juice. Cook over medium heat until the cherries soften and the mixture thickens. Strain the mixture and let it cool.

2. Whip the Cream: In a mixing bowl, whip the heavy cream until soft peaks form.

3. Prepare the Mascarpone Mixture: In another bowl, combine the mascarpone cheese, ½ cup of sugar, and vanilla extract. Gently fold in the whipped cream until the mixture is smooth and creamy.

4. Mix the Coffee and Amaretto: In a shallow dish, combine the brewed coffee and cherry amaretto.

5. Assemble the Layers: Quickly dip the Ladyfingers into the coffee mixture and line the bottom of your serving dish. Spread half of the mascarpone mixture over the Ladyfingers, then add half of the cherry puree on top. Repeat the layers with the remaining Ladyfingers, mascarpone mixture, and cherry puree.

6. Optional Cherry Sauce: If desired, make a simple cherry sauce by combining the optional sauce ingredients in a pot and simmering until thickened. Allow the sauce to cool before serving.

7. Chill and Serve: Refrigerate the Cherry Tiramisu for at least 4 hours or overnight to allow the flavors to meld and the layers to set. When ready to serve, top with fresh cherries and white/dark chocolate flakes for a stunning presentation.
