Cheesy Taco Rice is a cozy and comforting one-pot meal that combines the flavors of tacos into a hearty rice dish.

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoon taco seasoning
  • 2 cup beef broth
  • 1 can (10 ounce) Rotel (diced tomatoes & green chiles)
  • 2 tablespoon tomato paste
  • 1 cup long grain white rice
  • 1 cup shredded cheese

Instructions

1. 1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes. Add garlic and sauté for another 30 seconds.

2. 2. Add ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.

3. 3. Stir in taco seasoning until the beef is well coated.

4. 4. Mix in beef broth, Rotel, tomato paste, and long grain white rice. Stir to combine.

5. 5. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.

6. 6. Remove from heat and sprinkle shredded cheese over the top. Cover for 2–3 minutes to melt the cheese.

7. 7. Fluff with a fork and serve hot.

Notes

For a vegetarian or vegan version, substitute the ground beef with crumbled tofu or plant-based meat alternative, and use vegetable broth instead of beef broth.

If you prefer a heartier texture, try using brown rice instead of white rice. Just be sure to adjust the cooking time accordingly.

Adjust the amount of taco seasoning to suit your spice preference. Start with 2 tablespoon and add more if you like it extra spicy.

Prepare the dish in advance and reheat it in the oven or microwave when ready to serve. The flavors will only improve with time.
