  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1 1/4 cup sweetened shredded coconut
  • 1/2 teaspoon pure vanilla extract
  • 3/4 cup milk chocolate chips

Instructions

1. Preheat your oven to 350°F. Grease or line an 8×8-inch baking pan with parchment paper.

2. In a medium bowl, cream together the softened butter, brown sugar, and salt until light and fluffy. Gradually mix in the all-purpose flour until a dough forms. Press the dough evenly into the prepared baking pan. Bake for 15-18 minutes, or until the crust is lightly golden. Allow the crust to cool slightly.

3. In a saucepan set over medium heat, melt the butter, brown sugar, honey, heavy cream, and salt. Bring the mixture to a gentle boil, stirring constantly, then remove it from the heat. Stir in the sweetened shredded coconut and vanilla extract.

4. Pour the coconut caramel filling over the slightly cooled crust, spreading it evenly.

5. Sprinkle the milk chocolate chips over the warm filling. Let the chocolate sit for about 5 minutes, then use an offset spatula or the back of a spoon to gently spread the melted chocolate over the filling. If desired, sprinkle a light dusting of flaky finishing salt over the top.
