  • 8 ounce cream cheese, room temperature
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 11.6 ounce empanada dough
  • 1 1/22 cup vegetable oil for frying
  • 1/2 cup sugar
  • 2 tablespoon cinnamon

Instructions

1. Combine chopped apples, water, sugar, cornstarch, cinnamon, and lemon juice in a saucepan. Cook over medium heat until thickened. Let cool.

2. Beat cream cheese, sugar, lemon juice, and vanilla until smooth.

3. Lay out empanada dough rounds. Spoon apple filling and cream cheese mixture onto each round. Fold and seal edges with a fork.

4. Heat vegetable oil to 350°F. Fry empanadas until golden brown, about 2-3 minutes per side. Drain on paper towels.

5. Toss warm empanadas in a mixture of sugar and cinnamon.
