Instructions

1. Preheat Oven: Preheat your oven to 350°F. Line baking sheets with parchment paper.

2. Make Cookie Dough: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla extract, mixing well. Gradually add the flour, baking powder, baking soda, and salt, mixing until the dough is combined.

3. Prepare Filling: In a small bowl, mix the brown sugar, cornstarch, and cinnamon until well combined.

4. Shape Cookies: Roll out half of the dough on a floured surface to about 1/4-inch thick. Cut the dough into rectangles. Spoon a small amount of the filling onto half of the rectangles, leaving a border. Top with the remaining rectangles and press the edges to seal.

5. Brush & Bake: Brush the tops of the cookies with 1 tablespoon of milk. Bake for 12–15 minutes, or until lightly golden.

6. Prepare Icing: In a small bowl, mix the powdered sugar and 2 tablespoon of milk until the icing is smooth.

7. Decorate: Once the cookies have cooled, drizzle or spread the icing on top and add sprinkles if desired.
