Instructions

1. Step 1: In a skillet over medium heat, cook the breakfast sausage until browned. Remove any excess fat if necessary. Stir in the flour and cook for 1–2 minutes. Gradually whisk in the heavy cream, salt, and pepper. Simmer the mixture until thickened, about 5–7 minutes. Set the gravy aside.

2. Step 2: In a separate pan, heat oil over medium heat. Add the bell peppers and onions, season with salt and pepper, and sauté until tender. Remove the veggies from the heat and set them aside.

3. Step 3: In a pan, heat the butter and olive oil over medium heat. Add the beaten eggs along with the salt and pepper, and cook until softly scrambled. Remove the eggs from the heat.
