  • 1/4 cup bourbon
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon soy sauce
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 pound salmon filets (about 4 filets)
  • 2 fresh peaches, sliced
  • 1/4 cup fresh parsley, chopped

Instructions

1. Preheat your oven to 400°F.

2. In a bowl, whisk together the peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes.

3. Place the salmon filets in a shallow dish or zip-top bag and pour the marinade over them. Allow the salmon to marinate for 20-30 minutes.

4. Arrange the marinated salmon on a parchment-lined baking sheet. Drizzle with 1 tablespoon of olive oil and top with sliced peaches. Roast for 12-15 minutes or until cooked through.

Notes

For a milder bourbon flavor, reduce the bourbon to 2-3 tablespoon.
