  • 1 pound bok choy, halved lengthwise

  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste (adjust to taste)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon sesame seeds (optional)
  • Chopped green onions for garnish (optional)

Instructions

1. Heat the vegetable oil in a large skillet over medium-high heat.

2. Add the bok choy, cut side down, and cook for 2–3 minutes until slightly browned.

3. Flip the bok choy and cook for another 2–3 minutes until tender-crisp. Remove from the skillet and set aside.

4. In the same skillet, add the ginger and garlic. Sauté for 30 seconds until fragrant.

5. Add the soy sauce, rice vinegar, chili paste, sesame oil, and sugar. Stir to combine.

6. Return the bok choy to the skillet and toss to coat in the sauce.

7. Sprinkle with sesame seeds and chopped green onions (if using). Serve immediately.
