Instructions

1. Prep Chicken: Begin by patting the chicken pieces dry with paper towels. Season them with kosher salt and black pepper, then lightly dredge them in cornstarch, shaking off any excess.

2. Heat Griddle: Preheat your griddle or large skillet over medium-high heat. Add the neutral oil and heat it until it’s shimmering.

3. Cook Chicken: Add the seasoned chicken pieces to the hot griddle in a single layer. Sear the chicken until it’s golden brown and cooked through, about 4–6 minutes per side. Once cooked, remove it from the griddle and set aside.
