Ingredients

Scale
  • 1 pound fresh shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 6 ounce fettuccini pasta
  • 1 tablespoon butter
  • 3 cup fresh mushrooms, sliced
  • 1 tablespoon chopped shallots
  • 2/3 cup chicken broth
  • 1/2 cup sour cream
  • 1 tablespoon cornstarch
  • 1 cup chicken broth
  • 1 cup roasted red bell peppers, drained and chopped
  • 1 tablespoon drained capers

Instructions

1. Cook Pasta: Boil the fettuccini in a large pot according to package instructions. Drain and set aside.

2. Season Shrimp: Toss the shrimp with the Cajun seasoning, ensuring each piece is evenly coated.

3. Sauté Shrimp: Heat the olive oil in a large frying pan over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until they become opaque. Remove the shrimp from the pan and set them aside.

4. Sauté Vegetables: In the same pan, melt the butter. Add the mushrooms and shallots, and cook until they’re tender, about 5 minutes.

5. Make Sauce: In a small bowl, whisk together the cornstarch and 1 cup of chicken broth until smooth. Add this mixture to the pan, along with the remaining 2/3 cup of chicken broth. Stir and cook until the sauce thickens slightly.

6. Add Cream & Peppers: Reduce the heat to low and stir in the sour cream, roasted red peppers, and capers. Mix everything together until well combined.

7. Combine Pasta & Shrimp: Add the cooked fettuccini and the reserved shrimp to the sauce, gently tossing to ensure everything is evenly coated.

8. Serve: Serve the Blackened Shrimp Stroganoff immediately, garnished with extra Cajun seasoning or chopped parsley, if desired.

Notes

Adjust Spice Levels: The Cajun seasoning can be adjusted to suit your preferred level of heat and spice. Start with a smaller amount and gradually increase it to find your perfect balance.

Dietary Substitutions: For those with dietary restrictions, you can easily swap out the fettuccini for gluten-free pasta or use dairy-free alternatives, such as cashew-based sour cream, to make this dish allergen-friendly.

Garnish and Presentation: Elevate the dish’s visual appeal by garnishing with fresh parsley, sliced green onions, or a sprinkle of paprika or Cajun seasoning.
