  • Cornmeal for dusting the pizza peel or pan

  • 1 cup birria consomé stew, plus more for serving
  • 1 cup leftover birria
  • 2 cup grated Oaxaca cheese or Monterey Jack or Mozzarella cheese
  • 1/4 cup chopped onion
  • 2 tablespoon fresh cilantro leaves
  • 1 lime, cut into wedges

Instructions

1. Preheat your oven and pizza stone to 500°F.

2. Sprinkle cornmeal onto a pizza peel or pan.

3. Roll out the pizza dough into your desired shape and thickness, then brush it with olive oil.

4. Spread the birria consommé over the dough, followed by the shredded birria meat.

5. Sprinkle the grated cheese evenly over the top, then finish with the chopped onion.

6. Carefully slide the pizza onto the hot pizza stone or place the pan in the preheated oven.

7. Bake the Birria Pizza for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
