  • 2 tablespoon tomato paste
  • 1 cup red wine (optional)
  • 4 cup beef broth
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 stalks celery, sliced
  • 2 tablespoon all-purpose flour (optional for thickening)
  • 2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk or buttermilk
  • 1/4 cup melted butter
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

1. 1. Season the beef chuck cubes with salt and pepper. In a large pot or Dutch oven, heat oil over medium-high heat and brown the beef in batches. Remove the beef from the pot and set aside.

2. 2. Add remaining oil to the pot and sauté onions and garlic until softened. Stir in tomato paste, then pour in red wine or additional beef broth to deglaze the pot.

3. 3. Return browned beef to the pot along with beef broth, Worcestershire sauce, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for about 1 hour.

4. 4. Add carrots, potatoes, and celery to the pot. Continue simmering until vegetables are tender, about 30 minutes more. If desired, stir in flour to thicken.

5. 5. In a mixing bowl, combine flour, baking powder, salt, and herbs. Grate in cheddar cheese and stir to combine.

6. 6. Add milk or buttermilk and melted butter to the dry ingredients, stirring until just combined.

7. 7. Drop dumpling batter onto simmering stew. Cover and steam for 15-20 minutes until cooked through.
