  • 1 tablespoon olive oil
  • 1 cup Stubbs BBQ Sauce
  • 1 cup cubed rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sliced red onion
  • Optional: Fresh basil for garnish

Instructions

1. To start, you’ll want to preheat your oven to 400°F. Then, carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside of the squash halves with a bit of olive oil to help them roast evenly.

2. Place the prepared spaghetti squash halves, cut-side down, on a baking sheet. Roast the squash for 30-40 minutes, or until it’s tender and easily pierced with a fork.

3. Once the squash is cooked, use a fork to gently scrape out the spaghetti-like strands into a large bowl.

4. In the bowl with the shredded spaghetti squash, mix together the BBQ sauce, cubed rotisserie chicken, mozzarella cheese, and sliced red onion. Stir the ingredients until they’re well combined.

5. Spoon the BBQ chicken pizza filling back into the roasted spaghetti squash shells, being sure to fill them evenly. Place the stuffed squash halves back on the baking sheet and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
