  • optional toppings: 1/4 cup chopped fresh parsley, 1/4 cup sliced green onions, 1/4 cup diced chives

Instructions

1. 1. Preheat your oven to 400°F.

2. 2. In a baking dish, combine the grape or cherry tomatoes, chopped bell peppers, and diced red onion. Drizzle with olive oil and season with dried oregano, thyme, salt, pepper, and red pepper flakes. Toss until evenly coated.

3. 3. Roast the vegetables in the preheated oven for 15-20 minutes until the tomatoes begin to burst and the peppers soften.

4. 4. Remove from the oven and crumble the feta cheese over the top. Gently stir the feta into the vegetable mixture.

5. 5. Create small wells in the mixture and crack the eggs into these wells.
