Baked Eggs Florentine 4 Servings Easy Delicious

Baked Eggs Florentine is a culinary delight that perfectly combines the richness of eggs with the nourishing goodness of spinach. This dish is a true masterpiece, blending flavors and textures to create a mouthwatering brunch or anytime meal.

Ingredients

Scale
  • 4 large eggs
  • 2 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounce fresh spinach, washed and roughly chopped
  • Salt and pepper, to taste
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

1. Preheat your oven to 375°F and lightly grease a baking dish or individual ramekins.

2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Then, add the minced garlic and sauté for another 1 minute.

3. Add the spinach to the skillet and cook until wilted. Season the spinach mixture with salt, pepper, and nutmeg. Remove from heat.

4. In a small bowl, mix the heavy cream with the grated Parmesan cheese.

5. Spread the cooked spinach mixture evenly in the prepared baking dish or ramekins. Make small wells for the eggs and gently crack the eggs into each well. Pour the cream and Parmesan mixture over the spinach and eggs. Sprinkle the shredded mozzarella cheese on top.

6. Place the dish in the preheated oven and bake for 12-18 minutes, or until the egg whites are set but the yolks are still slightly runny, and the cheese is melted and golden.

7. Remove the Baked Eggs Florentine from the oven, sprinkle with chopped parsley, and serve immediately while hot and bubbly.

Notes

For a dairy-free version, substitute heavy cream with unsweetened almond or oat milk, and cheese with plant-based alternatives.
