  • 2 medjool dates
  • 2 apples, diced or thinly sliced
  • 2 teaspoon maple syrup
  • 1/4 teaspoon cinnamon

Instructions

1. In a small saucepan, combine the diced apples, maple syrup, and cinnamon. Cook over medium heat for 5–7 minutes, stirring occasionally, until the apples are tender. Remove from heat and set aside to cool.

2. In a food processor, pulse the rolled oats, nuts, and dates until a crumbly texture is achieved. Set the crumble aside, ready to be sprinkled on top of the chia pudding.

3. In a blender, combine the plant-based yogurt, apple butter, medjool date, miso paste (if using), vanilla extract, cinnamon, cardamom, salt, and soy milk. Blend until the mixture is smooth and creamy. Stir in the chia seeds, making sure they are evenly distributed.

4. Transfer the chia pudding mixture to a container and refrigerate for at least 4 hours or overnight, allowing it to thicken to the desired consistency.

5. Layer the chilled chia pudding in serving jars or bowls, top with the stewed apples, and sprinkle the crumble mixture over the top.
