  • 4 eggs, at room temperature

  • 1 cup apple cider
  • 2 cup apple cider (for coating)
  • 2 tablespoon salted butter (for coating)
  • 1/3 cup granulated sugar (for coating)
  • 2 tablespoon demerara or turbinado sugar (for coating)
  • 1 1/2 teaspoon cinnamon (for coating)

Instructions

1. 1. Preheat oven to 350°F. Grease and flour a 9×13-inch baking pan.

2. 2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.

3. 3. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla extract.

4. 4. Alternately add dry ingredients and apple cider to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.

5. 5. Pour batter into the prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

6. 6. In a small saucepan, combine apple cider, butter, granulated sugar, demerara sugar, and cinnamon. Bring to a boil, then simmer for 5–7 minutes until slightly thickened.

7. 7. Pour the warm apple cider coating evenly over the baked cake while still warm. Allow the cake to absorb the coating before serving.

Notes

For the perfect texture, be sure not to overmix the batter.

If you prefer a less sweet cake, reduce the amount of granulated sugar in the coating.

Allowing the eggs and butter to come to room temperature ensures they incorporate smoothly.

This cake can be made in advance and stored at room temperature for up to 3 days, or frozen for up to 2 months.
